The pancetta tesa salata ( stretched pancetta ) is obtained from the same ventral part of the pig used for the production of the seasoned bacon, only in this case the thinner and leaner pancetta is chosen, not very suitable for the long seasoning. Place the pancetta and trim it, leaving the rind, and then subject it to a light massage with the salt.
