The “Salame del contado” (salame of the countryside) is made with grounded national fresh pork meat.
It is salted manually and stuffed into natural crespone of calibreted pork. It is tied both by hand and by machine.
The seasoning is 30/45 days.
This Salame is flavored with the same ingredients of the Piacenza flavouring without, however, emphasizing the aromas, without any type of allergen, gluten or milk derivatives.
When cut, the “Salame del Contado” has a bright red / pink color in the lean parts, and bright white in the mixed parts, with a medium grain.
Taste: good fresh meat, soft in consistency, sweet and savory taste, slight hints of pepper and nutmeg, balanced aroma and slightly spiced.
Preservation: The Contado salame is preserved for a whole from 12 to 15 ° C, humidity 60-80%. Once cut it can be stored in the refrigerator and wrapped in food wrap. It can be degustated as it is, hand cut after having removed the skin. Average weight 0.500-0.700 Kg.
