Zampone has always been considered a particularly valuable product. It was therefore reserved for the holidays, accompanied by equally valuable lentils.
The presence of Zampone also on the tables of the nobles is confirmed by some traditional recipes which provide for accompanying it with zabaglione, a cream which, given its ingredients - eggs, sugar, fortified wine - was destined only for the tables of the wealthiest.

Ingredients. Pork meat, pork rind, salt, spices, flavorings in variable proportions, antioxidant: sodium ascorbate E301, preservative: sodium nitrite E250.
 
Instructions for use Immerse the still packaged zampone in cold water and bring to the boil for 25 minutes so that the heat can reach the heart of the product, cut a corner of the package to facilitate the release of the jelly formed during cooking. Remove the zampone, slice it and serve piping hot with traditional side dishes such as potatoes, beans, lentils, spinach and others to taste
