Parmesan baskets with ham and mango

Alessadra barbone food blogger of the site  "the dreamers of cooking and clouds" has prepared a simple basket of Parmesan that he filled with a julienne of ham bow and a diced mango. two slices of datterini to give an acidic and color note and a rain of thyme leaves to perfume everything. he did not use oil or salt or anything else as a condiment.

Here is alessandra's recipe.

ingredients: 12 tablespoons grated Parmesan cheese

12 slices of ham flake (the courtier of the salami factory la rocca)

1 ripe but firm mango a few sprigs of fresh thyme

2 datterini tomatoes

Preparation: the first thing I prepared were the Parmesan baskets. I heated a non-stick pan with a diameter of about 15 cm very well and I put on the whole bottom 3 tablespoons of grated Parmesan distributing it evenly and trying to give a round shape with the help of a spoon.

keeping the medium heat I melted the cheese and as soon as the edges have just colored with the help of a scoop I lifted very gently but quickly the Parmesan wafer and I placed it on an upside-down bowl to give it the shape of a basket.

You have to keep in mind that the wafer hardens almost instantly and therefore you have to be very quick to give it its shape. 

Do not worry if the first baskets of Parmesan you make will not be good for you, it is normal, but do not be discouraged.

I tell you that I made some before I could make beautiful ones. in the freattempo that the baskets cooled I cut into julienne the slices of ham flake that I had cut not too thin. I peeled the mango and cut it into cubes. I washed and dried the sprigs of thyme. then I started filling the baskets.

I put some julienne of ham flake in the basket trying to keep it all in one half. the other half I filled with a little mango cubes. I then put two cloves of tomato datterino on one side of the basket and I sprinkled everything with fresh thyme leaves.

I served immediately because the mango could have softened the basket.
