Certifications

Salumificio LA ROCCA produces and promotes no less than three products with Protected Designation of Origin: Coppa, Salame and Pancetta, typical from Piacenza, which are an integral part of the offer of the company. Their quality and authenticity is guaranteed by the full respect of the production disciplinary, approved by the European Community and verified by an independent certification body for food products.

The established requirements concern:

The production area: the pigs must have been born, reared and slaughtered in Lombardy and Emilia Romagna,they have the characteristics of the Italian Heavy Pig therefore are pure 100% Italian meat.

Raw materials: the fresh cuts of the coppa, of the pancetta are selected according to precise indications, the usable mince (trimming of ham, the flesh of the shoulder, the pink of the pancetta) are only the noble ones, to be clear, no soft parts or head’s boning,  the percentages of the ingredients used are rigorously fixed.

Method of production: the grinding processes, the salting processes with slow and dry massage for coppa and pancetta, still-manual sausage-making processes in natural casings, tying and drying processes, are all disciplined phases, as is the recipe based on ingredients and spices of our tradition (sea salt, pepper, nutmeg, a pinch of "saltpeter" as our grandparents used to do)

Maturing process: the characteristics of the environments, the parameters of temperature and humidity, the minimum ripening time for the Salame Piacentino is  45 days, for the Pancetta Piacentina is 120 days and for the Coppa Piacentina is 180 days, these are all information registered constantly  on digital support.

Organoleptic and chemical-physical characteristics: laboratory analysis and product panel-tests, verify that the strict limits, imposed by the disciplinary, are respected.

Controls: The Consortium of protection, the Certification Body and the health surveillance authorities of the Ministry of Agricultural and Forestry Policies, ensure that who produce or sell typical Piacenza cold cuts adopt all the standards approved by the U.E.
