Certifications

Salumificio LA ROCCA produces and promotes no less than three products with Protected Designation of Origin (DOP): Coppa, Salame and Pancetta, typical from Piacenza, which are fully integrated into the offer of the company. Their quality and genuiness are guaranteed by the full compliance with the disciplinary production, approved by the European Community and verified by an independent foodstuff certification body.

The requirements that the products have to meet concern:

The production area: the pigs must have been born, reared and slaughtered in Lombardy and Emilia Romagna, and have to be Italian Heavy Pig breed, meaning 100% Italian meat.

Select ingredients: the fresh cuts of Coppa and Pancetta are selected according to strict requirements, the grounded meat employed (trimming of ham, shoulder, pancetta) are only the most noble ones, and no soft parts or head’s boning are included. The percentages of the ingredients implied are rigorously set and defined.

Production method: The procedural guidelines as well as the recipes with ingredients and spices of our local tradition (sea salt, pepper, nutmeg, a pinch of "saltpeter" as our grandparents taught us) are very well disciplined: the grinding processes, the salting processes with a slow and dry massage for coppa and pancetta, handmade stuffing processes in natural casings ant the tying and drying processes

Fermentation: the characteristics of the environments, the parameters of temperature and humidity, the minimum fermentation time for the Salame Piacentino is 45 days, while the Pancetta Piacentina requires 120 days and Coppa Piacentina needs 180 days, these are all information constantly monitored with digital support.

Organoleptic and chemical-physical characteristics: laboratory analysis and product panel-tests verify that the strict limits, imposed by the disciplinary, are met.

Supervision: The Consortium of protection, the Certification Body and the health surveillance authorities of the Ministry of Agricultural, Food and Forestry Policies, ensure that who produces or sell typical Piacenza cold cuts is in compliance with the standards approved by the U.E.
