The Pancetta Piacentina DOP La Castellana è a product sweet and tasty traditional Piacenza tangy at the same time, with aromas and delicate scent.     DOP protected designation of origin requires   a precise and detailed specification for protection.

Pancetta - bacon - comes from heavy pigs belly sectioning Po coming only from herds of Emilia Romagna and Lombardy. From this specific adipose cut you get the so-called "belly", whose squaring and trimming from the source to the bacon itself. Is salted dry, with a mixture of salts, spices and herbs, as provided by the regulations, then rolled and sewn by hand. It contains no gluten, no dairy é.

All ingredients are allergen-free and doesn't come from GMO.

Once covered with natural leather and paper food ripens from 4 to 8 months (with peaks of 12) in the cool cellars of Salumificio La Rocca. Consumed warm bread or polenta, sliced on bruschetta but can ò be used to enrich the flavor pasta dishes, soups and roasts. Store in a cool, damp if whole, from 12 to 15 degrees. Once cut must be kept in the refrigerator wrapped in plastic wrap.
