The Salami Mariola (Salam Mariöla) is a traditional Piacentino product that meets the requirements established by a precise production disciplinary, and it is one of the traditional Italian food products (PAT), list that includes a number of products, edited by the Ministry of Agricultural, Food and Forestry Policies, and it is valued by the Consortium of Typical Piacenza Cold Cuts.

Processing It is made with chopped mixture from National fresh pork meat. It is salted by hand and stuffed into pig casing, also called muletta.
Hand-tied and aged from 45 to 120 days.
Ingredients: Pork, salt, dextrose wine, spices, natural flavors (garlic), preservatives: Potassium nitrate E252, sodium nitrite E250. Inedible casing.
Flavored with the same ingredients of Piacenza's flavouring, but without emphasizing the aromas, without any type of allergen, gluten or milk derivatives.

When cut it is bright red / amaranth in the lean, white / pink and mixed parts, medium grain.

Organoleptic characteristics It has a compact consistency, when well seasoned it has an intense flavor with hints of cellar and wood, complex aroma and spiced with notes of almond and dried fruit. While sliced, it created a drop wich means that the maturation is at its peak.

Suggested storage is from 12 to 15 ° C, humidity 60-80%. Once cut, it can be kept in the refrigerator wrapped cellophane.
